Food Bacteriology

History

The section has focused on the investigation of the frequency of Arcobacter in different production animals, including chicken, pork and cattle, as well as water and milk among others. From the isolations obtained, the presence of different virulence factors including putative virulence genes has been assessed. Also, resistance to antibiotics has been analyzed. In order to offer solutions to the food industries about the presence of this bacterium, especially the poultry industry, the effect of different organic salts has been studied in order to offer them as a substitute or additional agent for the control of this bacterium.

On the other hand, given the taxonomic closeness of this bacterium with Campylobacter, the study of potential inhibitory agents has extended to this bacterium as well.
